FRYING THE TURKEY Proper oil measurement: Place turkey in pot and fill with water to cover the entire turkey. Remove turkey and mark water level. Pour out water. Dry the turkey and pot before adding bacon oil. Pour or scoop John Gordon’s Bacon Oil into turkey pot to predetermined mark. Heat oil to approximately 375°F. Do not overheat. Temperature will drop when you place turkey in the pot. Turn off gas – no flame – before lowering turkey into pot. Turkey should be completely thawed and dry before lowering turkey into hot oil.
